What made you want to be in the restaurant business? and how did it all start for you?
I started working in a bar, part-time from 18-21 and really enjoyed it. I then got a job at Disneyland Paris where I trained as a flair bar tender, which was amazing fun! Following that I worked at Planet Hollywood in Paris. I then decided to come back to Edinburgh when the cocktail scene was just taking off and I took a job in a hot new bar and although I loved working there and got to party quiet alot. I decide I wanted to run my own bar and so I opened 99 Hanover Street, my first business. Following the success of 99 Hanover Street, I was able to open other bars/restaurants and expand into the events industry.
What advice do you have for those who want to open a restaurant?
It’s vital that you gain valuable experience first. I would advise that around 5 years with 2 years in a senior management role would be ideal before even thinking of opening a restaurant. In addition to that, I would strongly suggest that you have a very good understanding of cashflow and general accounting.
Based on your work, how does fashion fit into you life?
I’m surround by it everyday, from the people that I work with to the cliental we attract. Fashion inspires the type of design and style of my business and attracts the people I want to draw into my bars and restaurants.

Clean, simple and classic
Do you think the way you dress is important in business? and why?
Yes I do. I believe that there should be particular attire worn at work to present a clean and professional images, which is not necessarily of high fashion. I also think that different outfits are appropriate for different times of the day or depending on the event, for example during a normal working day I would wear jeans with a blazer, a suit for formal meetings and black tie for formal dinners.
What keeps you inspired to do what you are doing ?
The excitement of the next project and that moment when everything comes together and knowing that there are many unknowns just adds to the excitement.
What are you basics must have in your wardrobe?
A sports jackets, white shirts, brown brogues, Chelsea boots, dinner suits, a business suit in blue & grey and selection of dark jeans.
What are your favourite brands?
Nicole Farhi, Gant, Levi, Gieves and Hawkes, Pal Zileri and Churches to name a few.
What do you hope to be doing in 5 years?
Exactly what I’m doing now but within a larger business. I would like to expand what I have nationally and take Everything4Rugby.com internationally.
What is Everything4Rugby?
Everything4Rugby is an organisation consisting of well known professional and ex professionals rugby players, all with an interest in supporting and nurturing grassroots sport. The focus of the business is to assist the 2000 amateur rugby clubs in the UK and Ireland in running their business via three channels; a free online resource for clubs, the players and the fans, unique buying groups to save clubs money and support and mentoring from business and sporting professionals.
We are the only community for amateur rugby who covers the UK and Ireland. We offer everyone involved in amateur rugby a chance to be part of an organisation and community whose sole interest is to benefit the game and all those involved.
It has been a passion of mine since I was kid. Playing and supporting the game has always been a part of my life and via E4R we are really able to offer the sport a free resource that has benefits for all involved.
As a man who owns Steak Restaurants, I am sure you can’t eat that every day. Do you have a healthy diet and fitness you maintain?
I go to the gym 3-4 times a week, eat a high protein breakfast and snack on fresh fruits and smoothies through the day. The reason I eat well through the day is that dinner can be really varied. I go a little ‘off-piste’ as my commitments dictate what I eat in the evenings. I believe in a healthy balance of good nutritious food and fun in the evening.
